- Step 1: Cut and shred the cabbage.
- Step 2: Take half the quantity of shredded cabbage and layer them alternately with salt in a fermentation pot/wide mouth mason jar.
- Step 3: Puree the other half of the cabbage and make a thick slurry with water.
- Step 4: Mix the cabbage slurry with the shredded cabbage. Push and pack as much as you can.
- Step 5: Place a few cabbage leaves on top of this mixture and close the pot/jar. Sauerkraut is ready to eat in five to seven days.
