Coconut Water Kefir

This fermented drink aids digestion and is especially recommended with or after meals.

Ingredients

  • Water kefir grains, ¼ cup
  • Fresh coconut water, 6 cups
  • Lemon or orange juice, ½ to 1 cup

Method

Pour the water kefir grains & coconut water into a jar. Cover with a cheesecloth and let the mixture stand for up to 48 hours at room temperature. Strain the coconut water kefir and reserve the grains. A second fermentation will make the coconut water kefir fizzy. Mix coconut kefir and juice and pour into a tight-sealing bottle. Allow to ferment for up to 48 hours. Store in the refrigerator!
