Broccoli Soup

Ingredients:

250gms Broccoli

1 medium sized onion

4 cloves garlic

½ celery stalk

4 cups stock or water

1 cup low fat milk

Salt to taste

White pepper powder to taste

Broccoli is beneficial for weight loss as it contain a lot of fiber and is also rich in Vitamin B, Vitamin C, Phosphorous, Potassium, Calcium and Antioxidants all of which aid in weight loss.

Method:

  • Cut broccoli into small florets and wash well. Soak the florets in salted water for 10 to 15 minutes and drain.
  • Peel and roughly chop onion and garlic. Wash and celery stalk.
  • Heat vegetable stock or water. Add chopped onions, garlic and celery and bring to boil.
  • Add broccoli florets and continue to cook without covering the pan cook for 5-7 minute or till broccoli is tender.
  • Remove from fire. Cool and pure in a blender.
  • Add milk to pureed broccoli. Mix well and boil mixture again.
  • Add salt and white pepper to taste.

Serve hot.
